Jiangsu is a city that is neither south nor north, but it is the birthplace of mutton skewers, and even Xinjiang BBQ is willing to be inferior.

In most people's cognition, barbecue is always linked to these two places: Northeast China and Xinjiang. People from Northeastern China received a comment of "big gold chain and small watch, three small barbecues a day", while Xinjiang people's kebabs are popular in China's night market stalls, and the accent "kebab~" is still fresh in the memory of many people. .

Where does BBQ come from? Northeast or Xinjiang? In fact, they are all traced back to the source. The kebab is not the first in Xinjiang, and the small barbecue is not a specialty of the Northeast people. The historical information that can be traced back now locates the source of the barbecue in an ancient city in Jiangsu - Xuzhou.

Xuzhou, a prefecture-level city in Jiangsu Province, is obviously not as famous as Suzhou, Nanjing, and Yangzhou, the three cities with rapid tourism economic development, among many cities in Jiangsu. However, Xuzhou's eating habits have forced the city to open up another way, because Xuzhou is inclined to the north, and its food tastes have nothing to do with Jiangnan water towns.

People in Xuzhou have strong taste and love to eat sheep. If in Xinjiang, the best way to make mutton is kebabs, then in Xuzhou, kebabs can only be regarded as the most common type of kebabs on weekdays. Xuzhou people eat roast lamb, lamb chops, lamb tendons, lamb tendons, lamb tails, lamb livers, etc. Anyway, "no sheep can go out of Xuzhou smoothly".

Many precious historical relics are collected in the Xuzhou Han Dynasty Portrait Stone Museum. Historians and archaeologists have found that these "stone paintings" contain a lot of content about chefs cooking, which is the so-called "cooking picture". Among them is a picture, revealing that Xuzhou is the birthplace of barbecue.

This "stone painting" is divided into three panels, and it clearly depicts such a scene: four cooks are preparing a feast, one cooks water in front of the well; Hot pot; a cook cuts the meat on the side; another cooks kebabs in front of the stove with two lamb shanks hanging on them, as well as fish, chicken and duck.

This cultural relic was made in the third year of Yuanhe in the Eastern Han Dynasty, that is, in 86 AD, and has a history of thousands of years. Combined with other antiquities and classics, people found that as early as the Han Dynasty, the ancestors of Xuzhou had become a fashion to eat barbecue. Today, Xuzhou people love to eat barbecue, but it is just a continuation of the hobby of their ancestors.

Why do people in Xuzhou have a culture of eating roast lamb since ancient times? This may be related to the fact that Xuzhou itself is the birthplace of Chinese cooking. People think that people in Xuzhou love to eat mutton, and it comes from Peng Zu five or six thousand years ago, who is almost the same age as Chinese civilization.

Xuzhou people are born with a love for food, and they never lose out in cooking food. The locals do the opposite. They not only eat mutton in winter, but also eat mutton in summer, but also eat mutton with a lot of peppers. The culture of roast lamb also spread.
