After the study, the blood sugar data of each person eating different vegetable samples were compared and found that all vegetable samples played a role in suppressing blood sugar, but the effect was quite different. The rapeseed sample has the best effect on suppressing blood sugar. Compared with the sample eating rice alone, it can reduce the area under the blood sugar curve from 262 to 165, and the drop rate is as high as 33%, which well suppresses the GI value of the rice meal; followed by eggplant And cauliflower, the declines were 26% and 22%, respectively; beans and wax gourd ranked fourth and fifth, respectively, with a decline of less than 20%.

Of course, vegetables are foods that take time to chew, so the rice that goes with them enters the small intestine more slowly and blood sugar rises more slowly. However, it is difficult to confirm whether the effect of slowing blood sugar rise in beans and wax gourd is caused by slowing down eating, or whether the ingredients contained in them play a role. In the study, the top three vegetables can effectively smooth the fluctuation of blood sugar, and even after 4 hours of eating, there will be no excessive reduction in blood sugar.

Why did green leafy vegetables, cauliflower, and eggplant suppress blood sugar better in this study? In some foreign studies that use vegetables to control blood sugar and achieve beneficial effects, many of them also use green leafy vegetables, and the mystery may lie in its ingredients.

Green leafy vegetables are rich in insoluble dietary fiber, which has a strong sense of satiety. They are also rich in flavonoids, calcium, magnesium and other components, which are all factors that help control blood sugar. Cauliflower and eggplant are not only rich in potassium, but also rich in pectin, which has long been shown to delay the rise in blood sugar after meals. Eggplant is a good source of flavonoids such as rutin, and cauliflower contains glucosinolates, which more or less slow down digestion. In comparison, beans and wax gourd are also good sources of potassium, but the content of polyphenols such as flavonoids is low, and the content of pectin is not high, so the effect is less. Too much salt is difficult to control food intake, which is not conducive to the control of cardiovascular and cerebrovascular disease complications in diabetic patients. The latest research also found that a high-salt diet is not only bad for blood sugar control, but also disturbs the intestinal flora. If the total salt intake in a day is 6 grams of salt advocated at home and abroad, then only about 2 grams of salt can be eaten in a meal.
